Tony Gentile, Flagship Restaurant Group’s corporate executive chef, said the offshoot of the local sushi restaurant will include both a fast-casual and full-service option. Diners can order sushi or design-your-own rice and noodle bowls to go. They can also order from a separate made-to-order sushi menu — he said it will include some familiar dishes from Blue Sushi — take a number and eat at a table in the food hall. Blue Sushi Sake Grill chef Dave Utterback will create a variety of flavors of traditional ramen along with ramen burgers and pork buns, among other dishes. Gentile said it will have both a fast-casual and a sit-down component. The restaurant will be beer-focused, with more than 20 beers on tap. In the center of the hall, Gentile said, there will be a full-service bar, an offshoot of Blatt, that doesn’t have a name yet. The salad-centric concept will serve all sorts of greens with a variety of toppings. Salads will be made to order, Gentile said. Flagship and Nick Strawhecker, owner and chef at Dante Ristorante, will collaborate on this restaurant serving Sicilian focaccia-style pizza. The restaurant will serve street-style tacos with both traditional and nontraditional ingredients, among them a banh mi taco, a curry chicken taco with cucumber raita and breakfast.
